2. BLT Salad with poached eggs

If you think salad is boring than you’ve probably never tried this one. And yes, it definitely tastes as good as it sounds!

What do you need? (Ingredients for 2 servings)

  • 2 poached eggs
  • 70g salad
  • 2 big tomatoes
  • 1 tbsp olive oil
  • 4 slices of bacon
  • 2 slices of ciabatta bread
  • 1/3 cup Caesar dressing

How-to?

For a few minutes, cook the bacon slices in a pan with 1 teaspoon of olive oil until it’s golden and crispy. With the remaining olive oil, cook the 2 slices of ciabatta bread until it’s crunchy. Wash the salad, cut the tomatoes into slices and mix everything together with the bacon and the bread. Pour over the dressing and top the salad with poached eggs. Tastes best when bacon is still warm.
