4. Chocolate-drizzle coconut macaroons
I love sweets, and by saying I love sweets I really mean I could eat chocolate throughout the whole day. Here’s one delicious recipe for you which contains a lot of egg whites, so I’m sure it will fit perfectly into your macros.
What do you need? (Ingredients for approx. 35 macaroons)
- 5 large egg whites
- 1/tsp almond extract
- 1/4 tsp vanilla extract
- 280g coconut flakes
- 1 tbsp raw sugar
- 30g dark chocolate
How-to?
Mix together the egg whites, the raw sugar and the coconut flakes in a saucepan and cook it over medium heat for about 15 minutes until the mixture has a sticky and moist texture. After removing it from the hot plate stir in the vanilla and almond extracts and put the mixture in the fridge for about 30 minutes. While waiting you can preheat your oven to 300° and prepare a baking sheet with baking paper. After 30 minutes in the fridge you take out the mixture and – using a tablespoon – spoon small blobs. Once there is no dough left, put the baking sheet into the oven and bake for about 25-30 minutes. After cooling down you can now melt your dark chocolate and top the macaroons with it. Enjoy this little dessert with a coffee or tea.
