8. Pasta with eggs

Between all these nice recipes one with pasta should not be left out. As noodles are great energy dispensers we should definitely keep it in our nutrition plan. Here’s one great recipe for you.

What do you need? (Ingredients for 4 serves)

  • 4 eggs
  • 1 tbsp olive oil
  • 450g asparagus
  • 350g pasta of your choice
  • 2 tbsp walnut oil
  • 50g parmesan cheese

How-to?

Cook the asparagus for 3-5 minutes in hot salted water and rinse well to retain the green colour. Afterwards you cook the noodles in salty water until they’re ‘al dente’. Next step is to heat up the olive oil in a pan and break the 4 eggs into it. Cook it for a few minutes. While waiting for the eggs to roast, mix together the pasta with asparagus and walnut oil and serve it on a few plates. After the eggs are done you separate them from each other and place it on the noodles. You can now put some salt, pepper and parmesan cheese on top.
